I don't know why this is so good. It's just eggs and tomato sauce and garlic bread.
But it is a crazy cradle comfort of a dinner/lunch/brunch/breakfast in February--even a mild versioned month like this. An apartment with all your friends inside. Welcome. Be well. It's so easy in here.
Preheat your oven to 350° F.
Make a sauce like this (I used roasted tomatoes for the above).
Spoon the sauce into a dish. Crack an egg into it. Bake it for 15 minutes.
Brush some olive oil onto some bread. Toast it. Rub it with the cut side of a cut-in-half clove of garlic.
