Recipes for Moderns?


People have been asking. But I'm nervous about giving. Or, more aptly, I'm nervous I won't be able to accurately give. Give you instructions for preparation, otherwise known as recipes. But here's an amateurish try.


Zucchini and Summer Squash Croquettes

1 medium zucchini, finely grated
1 medium yellow summer squash, finely grated
1/2 medium red onion, chopped finely
2 cloves garlic, minced
2 tbs chopped fresh Italian parsley
1/4 (?) cup all-purpose flour
1 beaten egg
1/2 cup whole wheat panko bread crumbs
1/2 tsp (?) salt
1/4 tsp (?) freshly ground black pepper
2-3 tbs olive oil for sauteing

Once the zucchini and summer squash is grated, mix it together, salt it slightly and let it sit in a strainer for 10 minutes so it can drain. Then squeeze as much moisture out of it as you can.

In a medium bowl, mix the drained zucchini and squash with the onion, garlic, parsley, flour, and egg. Form the mixture into small patties. Preheat a nonstick pan with the olive oil at medium low heat. Gently coat each patty with the panko and set them carefully into the olive oil to saute. It takes about 5 minutes on each side to get a delicious crisp crust and a delicious soft center.
